BBQ Beef Casserole...

Just like you, I am BUSY woman. So I am always on the lookout for easy, cheap meals that every one at our table will eat (willingly with out forceable trauma!) This one qualifies...



  • 1 pound of ground beef or turkey
  • 1/2-1 c. chopped onion (whatever your preference)
  • 1/2 can of corn (not creamed)
  • 1/2 can chopped tomato
  • 1c. of BBQ sauce (whatever flavor you like best)
  • 1 package of dry cornbread mix(the pouch kind)

Allrighty...pre-heat your oven to 400. While it is warming, cook the meat and onion, then drain. Add back to skillet and add in 1/2 of both the corn and tomato. You can save the rest to be thrifty with your next meal! Stir in the BBQ sauce - you can add more sauce if it needs to be saucier. Mix the cornbread batter according to the directions on the package. Pour the meat mixture into a 9 x9" casserole dish. Pour the cornbread batter on top. Now bake for 20-25 minutes.

This was so yummy and we served it up with a salad. The recipe could be doubled and put into 9x13 to feed more people and the meat mix could be made ahead of time and frozen.
